Reid isn’t a huge dessert person, but he really likes angel food cake. Since this recipe has that in it, I usually make this for his birthday.
ANGEL FOOD CAKE, BROKEN INTO PIECES
1 SMALL VANILLA INSTANT PUDDING – MIX FOLLOWING DIRECTIONS
LG CAN CRUSHED PINEAPPLE, DRAINED
2 PKGS FROZEN SLICED STRAWBERRIES, THAWED
16 OZ COOL WHIP
SMALL JAR OF CHERRIES
USE 1/2 OF EACH AND
LAYER IN PUNCH BOWL OR GLASS BOWL IN THIS ORDER
1. CAKE
2. PUDDING
3. PINEAPPLE
4. STRAWBERRIES
5. COOL WHIP
REPEAT LAYERS, RESERVING FINAL LAYER OF COOL WHIP UNTIL ALMOST SERVING TIME AND THEN ADD CHERRIES TO THE TOP
*MAKE NIGHT BEFORE OR EARLY IN THE DAY

Ingredients:
1 cup chicken, cooked and chopped
1 cup zucchini, chopped
1 cup tomato, chopped
1/2 cup chopped onion
1/3 cup Parmesan cheese
1 cup milk
1/2 cup Bisquick
2 eggs
1/2 t. salt
1/4 t. pepper
Preheat oven to 400 degrees and grease 9 inch pie plate or casserole dish
Mix chicken and vegetables
Spoon into pie plate/dish
Beat remaining ingredients until smooth
Pour over chicken and veggies
Bake for 35 minutes or until knife inserted in center comes out clean
Let stand for 5-10 minutes before cutting

Ingredients:
2 chicken breasts, boiled and deboned
1 stick margerine
1 onion chopped
3 cans of cream of chicken soup
1-2 cans of chopped green chillies
1/4 t. to 1/2 t. ground cumin
Tostitos
Sharp cheese, grated
Saute’ onions in margerine in pan
Add soup, chillies, and cumin
Mix well and add chicken
Line casserole dish with chips
Pour chicken/soup mixture over chips.
Arrange more chips on top. Sprinkle with cheese and bake at 350 degrees for 20-30 minutes or until bubbly and cheese is melted and starting to brown.
Here are some recipes that I can’t claim as my own, but I LOVE them and wanted to share:
Double Chocolate Brownies- healthy and light, but still chocolate! Reid even liked these!
Turk-A-Roni - Sounds gross, right? BUT it’s not. It’s a lot of vegetables, with meat, pasta, and a tomato base to resemble Beef-a-roni, but in a more grown up and healthy way. LOVE it!
The Best Lasagna Ever- She isn’t lying- it really is the best! I wanted to impress my Mom, showing her that I really can cook, so I made this for her and it was great! I made this for a friend that just had a baby and she wanted to know what restaurant had made it b/c she couldn’t believe I had!
Almond Danish Swirls – A Paula Dean recipe. A patient made these for me when I worked at the oral surgeon’s office; they’re fabulous. I’ve only made them once and need to make them again!

*This is an attempt to mimic the new Starbucks Chocolate Banana Viviano drink.
1 scoop of chocolate whey protein powder (I use Myoplex, I LOVE it)
1 frozen banana, sliced
1 cup of non-fat milk
2 teaspoons of unsweetened cocoa powder
Blend the powders and milk together first, then add the banana and blend. Very good for you!
Around 300 calories, give or take.

2 tbsp of olive oil
2 boneless/skinless chicken breasts, cubed
Sliced Red Onions
Butternut Squash, cubed
Marinara Sauce (I highly recommend: Gia Russa
I found it at Publix.)
In one skillet, cook the chicken with a little bit of olive oil. In the other skillet, saute the red onions and squash.
Once chicken is fully cooked, add onion and squash mix, then pour the marinara sauce over it.
Extremely simple for a great meal! It’s different from what I normally cook, so we loved it!

I’ve never really learned how to cook fish, so lately I’ve been trying it out, conquering my fear! haha!
I was recently told that Mahi-Mahi can be cooked w/ any spices, its like chicken, but from the ocean.
2 Mahi Mahi filets (best price I found was a frozen pack from Whole Foods Market)
Ground Cumin
Rosemary
Lemon Pepper
Thyme
Garlic Powder
Heat oven to 365. Heat skillet w/ oil on med-high heat.
I didn’t measure the spices, I just mixed them together in a bowl.
I used spray butter on the fish, then patted the spice mixture around it. I then placed it in a hot skillet, browning the outside of the fish on both sides, then placed it in a casserole dish covered w/ foil. Put it in the oven for about 15 minutes, or until the fish is fully cooked (you can tell b/c it’ll be flakey).

Not exactly Rice Krispy Treats, but still yummy!
3 tbsp. Smart Balance Light Buttery Spray
1 large bag of minature marshmallows
2 cups of Fiber One Cereal
5 cups of Kashi 7 Whole Grain puffs (if you can’t find these, try Kix puff cereal, or just any puffy wheat cereal)
Melt the butter spead in a large sauce pan over LOW heat
Add marshmallows and stir until completely melted.
Remove from heat
Add both cereals. Stir until well coated.
Using a spatula, press mixture evenly into a baking pan coated w/ nonstick cooking spray.
Allow to cool.
Eat!
Its not exactly like a chicken pot pie, but its healthier and tastes great! This is one of my favorites.
2 or 3 large cooked chicken breasts, cooked and shredded
1 large can of Veg-all (drained) OR frozen mixed vegetables
2 cans of cream of Celery soup
1 Can of Cream of Chicken Soup
2 cans of Reduced Fat Crescent Rolls
**This makes quite a bit; I do that so there are left overs. You can change it to make it less if you’d like.
1. Heat oven to 350 degrees
2. Mix soups, veggies, and shredded chicken together in a bowl. Then pour into a large casserole dish sprayed w/ nonstick cooking spray.
3. Bake for about 30 minutes or until hot and bubbly.
4. While the dish is cooking, unroll the crescent rolls. Take the dish out of the over after the first 30 minutes and lay the flat pieces of the rolls to cover the dish.
5. Pleace back int he over for an additional 15-20 minutes or until top is golden brown.
6. Take out of oven and enjoy!
