**no name recipe; I stole this from Mark on the Biggest Loser
2 tbsp of olive oil
2 boneless/skinless chicken breasts, cubed
Sliced Red Onions
Butternut Squash, cubed
Marinara Sauce (I highly recommend: Gia Russa
I found it at Publix.)
In one skillet, cook the chicken with a little bit of olive oil. In the other skillet, saute the red onions and squash.
Once chicken is fully cooked, add onion and squash mix, then pour the marinara sauce over it.
Extremely simple for a great meal! It’s different from what I normally cook, so we loved it!
I’ve never really learned how to cook fish, so lately I’ve been trying it out, conquering my fear! haha!
I was recently told that Mahi-Mahi can be cooked w/ any spices, its like chicken, but from the ocean.
2 Mahi Mahi filets (best price I found was a frozen pack from Whole Foods Market)
Ground Cumin
Rosemary
Lemon Pepper
Thyme
Garlic Powder
Heat oven to 365. Heat skillet w/ oil on med-high heat.
I didn’t measure the spices, I just mixed them together in a bowl.
I used spray butter on the fish, then patted the spice mixture around it. I then placed it in a hot skillet, browning the outside of the fish on both sides, then placed it in a casserole dish covered w/ foil. Put it in the oven for about 15 minutes, or until the fish is fully cooked (you can tell b/c it’ll be flakey).
